Monthly Thematic Highlights — Japanese Hot Pot

Hot pot originated from the Jomon period of over 10000 years ago. Since the invention of earthenware, people have been using earthen pots as cookware, making food more digestible and leaving nutritious soup after cooking. Alongside the food culture development in Japan, different kinds of Japanese hot pots have emerged. In this autumn-winter season, Food Market introduces a variety of healthy, delicious hot pot essentials that are made with natural Japanese ingredients, allowing you to enjoy the authentic flavours of Japanese hot pots at home.

The soup base is made of tender, savoury “Hanamidori” chicken from Hakata, Japan, which is raised with specialty feed that contains seaweed, rice bran and soybean. Besides Chicken Hot Pot Soup, Yosenabe Hot Pot Soup made of Japanese bonito and kelp, and Kimchi Hot Pot Soup made of Korean-style sauce are also available.

Made with Shodoshima soy sauce and other specialty ingredients, the soup base helps bring out the flavour of different hot pot ingredients such as meat, seafood and vegetables. Available in different flavours including Matsuba crab with kelp, Ise lobster with miso and clam with scallop.

Made under the supervision of the popular Hokkaido meat restaurant “Niku No Kappo Tamura”, the sauce helps bring out the taste of meat and can be used as dipping sauce or seasoning. Sesame Sauce is made with sesame powder, crushed sesame and vinegar, giving it a light taste that goes well with cold dishes. Made of yuzu and lemon juice, Yuzu Ponzu has a refreshing citrus flavour which is suitable for chicken or tofu hot pot.

Tokushima yuzu has an outstanding aroma. In view of the decreasing demand caused by an ageing population, the founder of YUZURIKKO started her yuzu food production business at the age of 66, aiming to promote the preciousness of Tokushima yuzu. YUZURIKKO's yuzu pepper is handmade with yuzu and pepper from Tokushima and sea salt from Naruto Strait, and it is free of colouring, chemical flavourings and preservatives.

With more than 400 years of history, MUROJI uses mineral-rich and pollution-free underground water from Hakusan to produce naturally brewed soy sauce with a mellow taste that helps enrich the taste of ingredients. Their signature soy sauce is made into powder as a substitute for salt or pepper. Wasabi and garlic soy sauce powder, and bonito stock powder are also available.

Natural water from Mount Asama of Karuizawa, a popular summer resort in Japan brings the beer an excellent taste. Weiss Beer features a banana-like aroma and refreshingly gentle taste that is compatible with all kinds of food. Clear Beer has a refreshing hop fragrance and smooth taste, making it ideal for matching with flavourful meat dishes. Dark Beer delivers a rich, mellow taste that goes well with stewed dishes or hot pots.
